Chef Leon comes from a traditional family where real, lasting memories were made in the kitchen around the table. When traveling through Europe and Asia in his twenties, he became interested in the intersection of Old World and contemporary food traditions. For him, versatility and depth of range is what makes a successful chef. In the kitchen, he favors fresh, simple ingredients, combined with bright contrasts and crispy textures. He enjoys the simplicity of West Coast cuisine, as well as the rich flavors of the old European styles from which he frequently borrows. When not at Berwick, he enjoys spending time with his wife, Jenny and two small daughters, Leah and Ylinn.
