Skylar Lester is a photographer, food blogger, and cook from sunny South Florida. Passionate about the vegetarian diet, she has made it her goal to spread the word about its benefits and to try to convince others to make the jump to a healthier vegetarian lifestyle. She found that in order for people to actually stick with it, she had to come up with simple and delicious recipes that anybody could cook. That is why she started her easy to follow cooking blog, “The Simple Vegetarian”. After gaining numerous followers and support on the web, she decided to create a cookbook of the same name that contained her absolute favorite recipes, in hopes that her readers will also make the decision to go from flesh to fresh!
